Gaddy, as friends and fraternity fondly call him, has been cooking up a storm for over 20 years at ITC Hotels. He believes that food isn’t about impressing people; it is about making them feel comfortable.
His earliest recollections of good food were the well-presented table at home that included his father’s Sunday roast chicken and pork chops. In his own words, he possibly took to the profession ‘inspired by my father’s cooking’. An ardent animal lover, he devotes whatever time he can to their rehabilitation, while making sure the pets at home don’t give him the side eye!
As Executive Chef, he has directed the kitchen operations at the ITC Mughal and Sheraton New Delhi. Chef Gaddy’s culinary philosophy is about keeping it simple. For him, cooking is an art form; a gift to be shared.
